Homemade Vanilla Extract
Homemade vanilla extract started as a Christmas gift idea around here, but it quickly became something I never wanted to run out of myself. Once you make your own, it’s hard to go back to store-bought.
The flavor is richer, warmer, and deeper — especially after it’s had time to slowly develop over several months. It’s one of those simple kitchen staples that feels a little magical because it only gets better with time.
I also love that every batch feels slightly different depending on the vanilla beans used. Some turn out extra creamy and smooth, while others develop darker caramel notes perfect for baking.
And honestly? They make beautiful gifts.
🌿 Homemade Vanilla Extract
Ingredients

8–10 vanilla beans

1 cup vodka
(80 proof works best)
Optional:

bourbon for a warmer flavor

rum for sweeter notes
Supplies

Glass jar or bottle with tight-fitting lid

Sharp knife or kitchen scissors
Instructions
1. Prepare the Vanilla Beans
Using a knife or scissors, split the vanilla beans lengthwise.
You do not need to scrape the seeds out completely — just open the beans enough to expose the inside.
2. Fill the Jar
Place the vanilla beans into a clean glass jar or bottle.
Pour vodka over the beans until fully submerged.
3. Seal and Store
Tightly seal the jar.
Store in a cool, dark place such as:

4. Shake Occasionally
Give the bottle a gentle shake every week or two during the first couple months.
How Long Does It Take?
Vanilla extract technically begins infusing almost immediately, but true homemade vanilla extract takes time.
