Homemade Vanilla Bean Paste
If vanilla extract is a kitchen staple, vanilla bean paste feels like gold in a jar.
Rich, thick, fragrant, and packed with real vanilla bean specks, homemade vanilla paste brings an incredible depth of flavor to everything from buttercream and cookies to whipped cream, cheesecake, and coffee drinks.
I originally started making it because I loved the look of those beautiful little vanilla flecks in bakery desserts, but after using homemade paste for the first time, I realized the flavor was just as special as the appearance.
It has the richness of vanilla extract with the concentrated flavor of whole vanilla beans — and once you keep a jar in the kitchen, you start finding excuses to use it in everything.
✨ Homemade Vanilla Bean Paste
Ingredients

8–10 vanilla beans

¾ cup water
-
¾ cup granulated sugar
-
2 tbsp light corn syrup
-
1 tbsp vanilla extract
-
1–2 tsp food-grade vanilla bean powder (optional for extra intensity)
Optional:

tiny pinch of salt
Supplies

Saucepan
-
Blender or immersion blender
-
Fine mesh strainer (optional)

Clean glass jar
Instructions
1. Prepare the Vanilla Beans
Slice the vanilla beans into small pieces.
You can leave all the seeds inside — that’s where much of the flavor comes from.
2. Make the Syrup Base
In a saucepan combine:

water
-
sugar
-
corn syrup
Heat gently over medium heat until sugar fully dissolves.
Do not boil aggressively.
3. Blend
Add:

chopped vanilla beans
-
vanilla extract
Blend until smooth and thick.
The mixture should look dark, glossy, and heavily speckled with vanilla.
4. Simmer
Return mixture to low heat for several minutes, stirring often, until slightly thickened.
It will continue thickening as it cools.
5. Cool and Store
Pour into a clean jar and allow to cool completely.
Store tightly sealed in the refrigerator.
